Why Do the Seeds in My Bread Sometimes Look Green?

From time to time, you may notice a light green or bluish tint around the pumpkin seeds in our seeded loaves.

This happens because pumpkin seeds naturally contain an antioxidant called chlorogenic acid. When it reacts with the baking soda in our traditional soda bread recipe, a harmless color change can occur. Over a day or two, especially in a moist environment, this reaction can cause the seeds to take on a greenish hue.

What’s important to know:

It is completely safe and has no effect on taste or freshness.

How to Keep Your Loaf Fresh

Store your loaf in the refrigerator to keep the bread fresher for longer.

Or, slice it the day you buy it and freeze the slices. This way, you’ll always have perfectly fresh bread ready for toasting.

The green tint is simply cosmetic and a sign of natural ingredients at work — the bread remains every bit as wholesome and delicious.
